We just stayed at Bahia Principe Esmeralda and giving $5 for 2-3 people at alacarte restaurants was appreciated by them.
Giving $1 to the bartenders per drink here and there makes some great friends.
They also LOVE baseball, so we often bring new MLB hats and give them away to special staff.

At the bahia principe it seemed tips were expected and at the a la carte all inclusive retaurants we think we even got bad looks for leaving $10
